Crispy Oven-Baked Fries

Love french fries but don’t want those deep-fried, cholestrol-ladden ones and can’t get the oven baked version as crispy as you want them to be?

This is a tried and tested, fail-proof recipe for really crispy, scrumptious oven-baked french fries that are packed with all the nutrients without the guilt of deep-frying.

Ingredients:

1 teaspoon sea salt

1/2 teaspoon chili powder

1 teaspoon thyme

1/8 teaspoon cumin

1/8 teaspoon freshly-ground black pepper

3 medium potatoes cut to thin slices

1-2 tablespoons olive oil

1-2 tablespoons grated parmesan cheese (optional)

Method:

– Leave the fries to soak in cold water and a little bit of vinegar in a covered bowl for at least 30 minutes. If you’re soaking for longer, place the bowl in the fridge

– Drain the fries, rinse them and lay them on a kitchen towel to dry off.

– Heat your over to 200 degrees celsius

– Lay the fries on a tray lined with well-oiled baking paper or foil and mix them in half the quantity of salt, chili, thyme, cumin and pepper and add the full quantity of olive oil and parmesan cheese. Toss the fries well to get them well-coated and make sure they’re not overlapping on the tray.
– Bake in the oven for 25 minutes, tossing them half way through

– Take the fries out of the oven, let them rest for five minutes and turn the heat up to 225 meanwhile.

– Put the fries back in the oven and let them bake for five more minutes or until golden, crispy and slightly darker on the edge.

– Sprinkle with the remaining spices (salt, chili, thyme, cumin and pepper) and enjoy!
