Basil Chicken Recipe
April 17, 2013This is a healthy chicken recipe with a zesty, herbal kick. It only takes an hour to soak and about 10 minutes to put together, you also toss everything in one baking dish so you’re not left with a pile of dishes to wash after. This is good for summer lunches and casual dinners. Brought to you by Chef James Martin.
Ingredients:
-1/2 kilograms chicken breasts
– 75 grams basil leaves
– 25 grams coriander leaves
– 25 grams mint leaves
– 1 green chili, chopped
-2 tablespoons peeled and chopped root ginger
– 2 tablespoons vegetable oil
– 2 tablespoons plain yoghurt
– salt to taste
Instructions:
– Slice chicken breasts into cubes
– Toss all other ingredients in a blender and blend into a paste (we also tried just chopping the herbs off and it worked just fine)
– Add paste to chicken and put it in a baking dish, cover the dish and leave in the fridge for an hour
– Preheat over to 200 Celsius
– Put the chicken in the oven for about 20 minutes and serve immediately
