Simple, Low-Calorie Zucchini Soup

– They’re low in calories
– They have no saturated fats or cholesterol
– Unpeeled zucchinis are great sources of dietary fibers that help digestion and protect against colon cancer
– They are considered anti-oxidants
– They’re a great source of potassium, which reduces blood pressure and promotes a healthy heart
Because the weather decided to be winter again, here’s a 10-minutes recipe to hearty zucchini soup that’s filling and low in calories.
This recipe serves six.Each serving has around 130 calories.
Ingredients:
– 1 kilogram zucchinis cut in slices
– 1 chopped onion
– 1 teaspoon oregano
– 3 cups vegetables stock
– 1/2 cup cream (could be substituted with 1/2 cup of full-fat milk or a lighter alternative)
– 2 tablespoons butter
Instructions:
– Melt butter and saute onion for a few minutes then add oregano
– Add zucchinis and salt and pepper
– Let cook for 10 minutes
– Add vegetable stock
– Put the lid on leaving half the pan open and cook on gentle simmer for 15 minutes
– Process soup
– Add cream and stir over low heat until hot but do not boil
– Season to taste
